A famous Sri Lankan street food made with chopped roti, vegetables, and your choice of meat or seafood, stir-fried together with spices.
Ingredients:
- 4 large godamba rotis (or paratha), cut into small pieces
- 200g chicken breast, cut into small pieces (or tofu for a vegetarian option)
- 1 large onion, sliced
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 1/2 cup leeks, sliced
- 2 eggs (optional)
- 2 green chilies, sliced
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- 1 tbsp soy sauce
- 1 tbsp curry powder
- Salt and pepper to taste
- 1 tbsp oil
Instructions:
- Heat oil in a large pan or wok and sauté garlic, ginger, and onions.
- Add chicken and cook until browned.
- Add carrots, cabbage, leeks, and green chilies. Stir-fry for a few minutes.
- Add curry powder, salt, and pepper.
- Push the ingredients to the side of the pan and scramble the eggs (if using).
- Add chopped roti pieces and soy sauce, mixing well until everything is combined.
- Serve hot with a side of sambol.
