Kottu Roti

 A famous Sri Lankan street food made with chopped roti, vegetables, and your choice of meat or seafood, stir-fried together with spices.

Ingredients:

  • 4 large godamba rotis (or paratha), cut into small pieces
  • 200g chicken breast, cut into small pieces (or tofu for a vegetarian option)
  • 1 large onion, sliced
  • 1 carrot, julienned
  • 1 cup cabbage, shredded
  • 1/2 cup leeks, sliced
  • 2 eggs (optional)
  • 2 green chilies, sliced
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp curry powder
  • Salt and pepper to taste
  • 1 tbsp oil

Instructions:

  1. Heat oil in a large pan or wok and sauté garlic, ginger, and onions.
  2. Add chicken and cook until browned.
  3. Add carrots, cabbage, leeks, and green chilies. Stir-fry for a few minutes.
  4. Add curry powder, salt, and pepper.
  5. Push the ingredients to the side of the pan and scramble the eggs (if using).
  6. Add chopped roti pieces and soy sauce, mixing well until everything is combined.
  7. Serve hot with a side of sambol.
