Watalappan (Coconut Custard Pudding)

 A traditional Sri Lankan dessert made with coconut milk, jaggery, and a hint of cardamom.

Ingredients:

  • 1 cup coconut milk
  • 200g grated jaggery (or brown sugar)
  • 3 large eggs
  • 1/2 tsp cardamom powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Cashews for topping

Instructions:

  1. Melt the jaggery in a little water until smooth.
  2. Whisk the eggs in a bowl.
  3. Slowly add melted jaggery and coconut milk to the eggs while stirring continuously.
  4. Add cardamom, nutmeg, salt, and vanilla extract.
  5. Pour into a greased baking dish and top with cashews.
  6. Steam the mixture for about 45 minutes or until set.
  7. Let cool and serve.
