Sri Lankan Chicken Curry (Kukul Mas Curry)

A classic chicken curry bursting with flavors from roasted curry powder, coconut milk, and a blend of spices.

Ingredients:

  • 500g chicken (cut into pieces)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 green chilies, sliced
  • 1 tbsp roasted curry powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tbsp tomato paste
  • 200ml coconut milk
  • 1 cup water
  • Salt to taste
  • Curry leaves
  • 1 tbsp coconut oil

Instructions:

  1. Heat oil in a pan and sauté onions, garlic, and ginger until golden.
  2. Add green chilies, curry leaves, and spices. Stir for a minute.
  3. Add chicken pieces and sauté until the chicken is sealed.
  4. Mix in tomato paste and cook for another minute.
  5. Add coconut milk and water. Cover and simmer for 20-25 minutes.
  6. Adjust salt to taste and serve hot with rice or roti.
