Ingredients:
- 500g chicken (cut into pieces)
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 green chilies, sliced
- 1 tbsp roasted curry powder
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tbsp tomato paste
- 200ml coconut milk
- 1 cup water
- Salt to taste
- Curry leaves
- 1 tbsp coconut oil
Instructions:
- Heat oil in a pan and sauté onions, garlic, and ginger until golden.
- Add green chilies, curry leaves, and spices. Stir for a minute.
- Add chicken pieces and sauté until the chicken is sealed.
- Mix in tomato paste and cook for another minute.
- Add coconut milk and water. Cover and simmer for 20-25 minutes.
- Adjust salt to taste and serve hot with rice or roti.
