Pol Sambol (Coconut Sambol)

 A refreshing and spicy coconut relish typically served as a side with rice, hoppers, or bread.


Ingredients:

  • 1 cup grated fresh coconut
  • 1 small red onion, finely chopped
  • 2-3 dried red chilies
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1 tsp Maldive fish flakes (optional)

Instructions:

  1. Grind the dried red chilies and salt into a fine paste.
  2. Add chopped onions and continue grinding until well mixed.
  3. Add grated coconut and mix thoroughly.
  4. Squeeze in lime juice and adjust seasoning.
  5. Serve as a side dish with rice or bread.
