A simple and quick flatbread made with grated coconut, perfect for serving with curries or as a snack.
Ingredients:
- 2 cups all-purpose flour
- 1 cup grated coconut (fresh or frozen)
- 1 small red onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 tsp salt
- Water as needed
- 1 tbsp oil
Instructions:
- In a bowl, mix flour, grated coconut, onion, green chilies, and salt.
- Add water gradually and knead into a smooth dough.
- Divide the dough into small balls and flatten into discs.
- Heat a griddle or non-stick pan and cook each roti until golden brown on both sides.
- Serve with dhal curry, sambol, or simply with butter.
