Sri Lankan Dhal Curry (Parippu Curry)

 A hearty and simple lentil dish made with coconut milk and spices, perfect for a vegetarian option.

Ingredients:

  • 1 cup red lentils (Masoor dal)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp turmeric powder
  • 1 cup coconut milk
  • 1 cup water
  • 1 tbsp mustard seeds
  • 1 dried red chili
  • Curry leaves
  • 1 tbsp oil
  • Salt to taste

Instructions:

  1. Wash the lentils thoroughly.
  2. In a pot, add lentils, water, turmeric, and salt. Bring to a boil and then simmer until lentils are soft.
  3. Add coconut milk and cook for another 5 minutes.
  4. In a separate pan, heat oil and add mustard seeds, dried chili, and curry leaves. Fry for a few seconds.
  5. Pour this tempering over the lentils and mix well.
  6. Serve hot with rice or flatbreads.
